Smoky Chickpea Shakshuka

Ingredients

  • 1 can chickpeas
  • 1 can crushed tomatoes
  • 4 eggs
  • 1 onion
  • 1 red pepper
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • Feta + parsley to finish

Steps

  1. 1

    Soften onion and pepper; bloom the spices.

    Add tomatoes and chickpeas; simmer 10 minutes.

  3. 3

    Make four wells and crack in the eggs; lid on, 6–8 minutes.

  4. 4

    Crumble feta over and serve from the pan with bread.
