One-Pan Lemon Chicken Orzo
Ingredients
- 4 chicken thighs
- 1.5 cups orzo
- 3 cups stock
- 1 lemon (zest + juice)
- 1 bag baby spinach
- 4 cloves garlic
- Olive oil, salt, pepper, oregano
Steps

Sear seasoned thighs skin-side down in olive oil until deeply golden; set aside.

In the same pan, soften garlic, then toast the orzo for a minute in the drippings.

Add stock, lemon zest and juice; nestle the chicken back in.

Simmer 15 minutes, fold in spinach, and rest 5 minutes off the heat.
