Brown Butter Mushroom Toast

Ingredients

  • 300 g mixed mushrooms
  • 3 tbsp butter
  • 1 clove garlic
  • Thick sourdough
  • Lemon, thyme, flaky salt

Steps

    Dry-sear mushrooms in a hot pan until browned — no oil, no crowding, no touching.

  2. 2

    Add butter and thyme; let it foam and brown, basting as it goes.

  3. 3

    Grate in garlic off the heat with a squeeze of lemon.

  4. 4

    Pile onto thick toast and finish with flaky salt.
