10-Minute Pickle-Brine Fried Rice
Ingredients
- 3 cups cold leftover rice
- 2 eggs
- 3 tbsp pickle brine (dill, obviously)
- 2 tbsp soy sauce
- 1 cup frozen peas
- 2 chopped pickles
- Scallions
Steps

Scramble eggs hard in a screaming-hot wok; push to the side.

Add rice and break it up; let it sit to crisp before tossing.

Splash in brine and soy; add peas and chopped pickles.
