10-Minute Pickle-Brine Fried Rice

Ingredients

  • 3 cups cold leftover rice
  • 2 eggs
  • 3 tbsp pickle brine (dill, obviously)
  • 2 tbsp soy sauce
  • 1 cup frozen peas
  • 2 chopped pickles
  • Scallions

Steps

  1. 1

    Scramble eggs hard in a screaming-hot wok; push to the side.

    Add rice and break it up; let it sit to crisp before tossing.

  3. 3

    Splash in brine and soy; add peas and chopped pickles.

  4. 4

    Toss until glossy, top with scallions, eat from the pan (we won't tell).
